Raw Hummus

Yummy Raw Hummus!!!  I will post pictures as the beans begin sprouting and a pic of the final product.

Raw Hummus

Ingredients

  • 1 1/2 cups dry garbanzo beans
  • ½  cup Tahini
  • 1 teaspoon sea salt
  • 1 lemon, juiced
  • ¼ cup olive oil
  • 1 ½ tablespoon of Tamari
  • 1 tsp garlic, crushed or to taste
  • 1 ½ teaspoon of ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon cayenne pepper (optional)
  • 2 tablespoons minced fresh Italian parsely
  • ¼ to ½ cup water as needed

Directions

Soak the beans for 24 hours. Drain, place in a glass jar in the window seal and let sit for 2 to 3 days, until the bean sprouts are about 1/2 inch long. Turn and rinse the beans once or twice a day. If for some reason you cannot make the hummus for a few days after they have sprouted you can rinse them and place them in the fridge in a zip lock bag for a few extra days.

Bring a large pot of water to a boil. Remove from heat, and let stand until the water is no more than 114 degrees. Place the room temperature sprouted beans in the warm water, cover, and let steep for 30 minutes or so(do not skip this step). Drain and place the sprouted beans into the container of a large food processor or blender. Add the remaining ingredients and process until smooth, adding the water if necessary. It will take 3 to 5 minutes to blend. If too thick, add water as needed, and blend again. Taste and adjust seasonings if needed.
NOTE: I use as many organic ingredients as possible.
You will need to cut some mesh to fit inside the lids for the sprouting jars.  The mesh can be purchased at any local craft store.
